Just for clarification. The DC controller(s) will only work with Capcom titles, correct?

No, not all of them. Just the ones that support this function. For example, PowerStone is a Capcom game, but it doesn't support the VMU function (Dreamcast controllers).

So is there a list somewhere here on this site of titles that are known to be compatible with just a DC controller?

This subject has been discussed in a previous post. If you use the search function you will find this page. The supported list is very small, limited to around 4 or 5 games.
