Because their quality and reliability varies GREATLY depending on who made it, when they made it, what revision it is, how it's connected, how it's powered, and what chip you are trying to program with it.

If you are trying to program anything over 12.5v such as older non-CMOS 32K EPROMs you'll have very mixed luck. Models that are externally powered are more reliable than USB powered for that.

Think I'm going to buy one of the 4's. They have external power as well as USB, so as it'll be sat in the workshop it can be externally powered all the time.

Now all I need is a cheap EPROM supplier

Got a Willen 4X - Superb. Reads & writes everything I need ATM. No issue with 27c160s, and will support the 27c322, but they are a bit expensive & I have no use for them anyway.

Just a query, when I read the EPROM I get the hex info. Is there a way to convert this to the source code, so I can see what's going on?

Maybe using MAME or something?

You'll need a disassembler. The type/version you need depends on the CPU in use as each one uses different opcodes.
