I've converted a Touring Car machine to model 3 (very easy) and installed a Daytona 2 Power Edition boardset. The original model 2 feedback board works fine using the TC rom. So you dont miss out on feedback!
The Hi/lo shifter is easily changed for a 4 way (all the wiring is there).
Sound works but obviously if you want music, you need to install a second amp, interconnect board and the dsb 2. The wiring is the same for the dsb 1 and 2.

To be honest, it's not THAT difficult a job to do, but yes, starting with a newer model 3 cabinet would make the job easier, albeit at a price premium.
As Geezer said, what you suggest is a half working mod. It's like playing OR2 with M3 feedback = no good.
Now obviously it depens if you're happy with it considering the money you spent on the machine.
My own POV is to play the real deal.
On the FF side, Geezer should confirm my thoughts but M2 wheel wont work with M3 boards
